Orange Cocoa Bites

These no-bake orange gingerbread cocoa cookies are super easy to make and are just 5 ingredients. Vibrant by the Spoonful put these together for us, and we are in love. She did them as a Christmas treat but you can just as easily make them as a snack any time of year.

**Makes about 8-12 large balls or 24 small cut-out cookies

Ingredients 

 1 1/2 cup almond meal

 5 pitted medjool dates

 1/2 tsp vanilla extract 

 1 tbsp of orange zest

 1 tbsp of freshly pressed orange juice

 1 tbsp of Its Blume Gingerbread Cocoa blend

 1 1/2 tbsp of raw cacao powder

 sprinkle of pink salt

Instructions 

1. Place all dry ingredients, including the orange zest, vanilla and juice of orange into a blender (I

used my Nutri-bullet). Blend until a dough-like consistency is formed.

2. After blending, form into a larger ball. Dust your counter with gluten-free flour or coconut oil

and roll into a thin layer, approximately 1/4 inch thick. Cut out the dough using a snowflake

cookie cutter (or other chosen shape!), and place on a parchment paper-lined glass

Tupperware. 

3. Place in the fridge for 15 min to slight firm and enjoy. Store in the fridge for 5 days.
